Date: 2008-04-24 07:19 pm (UTC)On how to cut thin crust pizza: thin pizza cut into squares is good for hors d'oeuvres. For an actual meal, cutting it in pie wedges makes more sense, because that way you're eating 6 pieces (thin crust -- no read to bulk it out -- takes a lot of surface area to make a meal) instead of 40 or something. Unfortunately, I don't think I've encountered a pizza place that asks when you order it if you're having dinner or catering a party.
On forks: I prefer to eat deep dish or true thick crust pizza with a real live metal knife and fork. Plastic flatware is useless, as is a fork without a knife. I've eaten lots of pizza without flatware -- but I'm less likely to make a huge mess if I have it, and I've achieved enough maturity that I don't actually enjoy making a mess of my food any more.
By the way, it's worth pointing out that the difference between real pizza and the stuff delivered by national chains is almost as stark as the difference between real ravioli and Chef Boy-Ar-Dee. I suspect that the vast majority of Americans have never actually had really good pizza. A decent deep dish pizza has to bake for more than half an hour -- it ain't fast food. When the market is conditioned to believe that pizza is something that can be delivered in half an hour, something that takes an hour to fix is a tough sell.
