I have in fact come close to driving off after pumping gas. I usually pay at the pump. Occasionally, I want a soda or something, so I plan to go in and pay/get tasty snacks. But by the time I'm done pumping the gas, I've spaced that. The beeeeeeeeps remind me to go in and get a snack.
The beeping is part of the widespread assumption in our society that you're nothing but a petty thief.
