I'm not a Netflix subscriber myself, so I'm not sure of what's available. That said, my favorite scripted drama of the last few years is "Justified". Great writing, wonderful acting.
In the SF/Fantasy area, if you haven't seen it, catch up with "Fringe". One key character kept me coming back in the good-but-not-great first season (Walter is one of the best mad scientists ever), but then the show matured into something special.
In the reality area, I'm a huge fan of "So You Think You Can Dance". They pair fantastic dancers with great choreographers, and keep the focus on the quality of the work, with minimal personal drama.
If you like SF, I'd say Being Human, both UK and US, Primeval, warehouse 13, supernatural, ultraviolet, life on mars (both US and UK) heroes, ll Star Trek and Doctor Who, and much more I can't think of right now. The new Sherlock is really great. MI6 is very good. A quirky comedy is Doc Martin. The new Netflix produced House of Cards with Kevin Spacey is quite good. It is based on a UK show called House of Cards that is very good too.
Hmm... We've just finished the run of Dinosaurs, the Henson company production from the early 90s. The show took a few episodes to hit its stride, but then maintain a very high quality. The discs had some episodes that never aired.

Buffy the Vampire Slayer, Hotel Babylon, The Walking Dead, Sherlock, Jekyll, Arrested Development, or Star Trek Original Series. Some of these may be rewatches - all of them are worth seeing twice, except maybe Walking Dead because it's quite gorey.
I recently finished Sherlock (highly recommend it!) and I'm presently making it through about half a season of West Wing every night (I don't know WHAT reason I had for waiting THIS long to watch it - it's just about my perfect show for hitting all of my buttons in a good way).
